What is Gluten?
Gluten is a generic term for the storage of proteins found in all forms of grains such as gliadin in wheat, hordein in barley, secalin in rye, avenin in oats.
This protein - Gluten is also found in durum, semolina, and spelt. Grains like rye, oats, barley and related grain hybrids such as triticale and kamut.
Protiens such as zein in corn and oryzenin in rice is slightly different from the others. It is important to note that the gluten found in corn and rice does not cause harm to those with Celiac Disease.
