Breads
Gluten-Free Bread

Ingredients:

3 cups milk
1/3 cup sugar
1 tablespoon instant yeast
2 teaspoons guar gum
2 teaspoons salt
6 egg yolks
1/3 cup light olive oil
1 3/4 cups club soda or sparkling mineral water

Preparation:

Combine dry ingredients in a large mixing bowl. Use a large whisk to thoroughly blend.

Lightly whisk egg yokes. Add olive oil to yolks and add to dry ingredients.

Slowly add carbonated water to the bowl and mix until blended.

Beat on high for 4 minutes.

Cover bowl with a damp towel and place in a warm location for 45 minutes or until the batter is about 1 1/2 inches below the top rim of the bread pan.

Grease a loaf pan with butter and preheat oven to 325°.

Bake for 50 minutes or until internal temperature reads 200° on an instant read thermometer or until bread springs back when pressed with a finger.

Remove from loaf pan and cool on a rack before cutting.



Bran Bread


Ingredients

2 eggs
1 1/2 cups milk
1 teaspoon lemon juice
1 1/2 teaspoons salt
1 tablespoon light corn syrup
1/4 cup melted butter
1 1/2 cups rice flour
1 3/4 cups brown rice flour
1/4 cup rice bran
1 tablespoon xanthun gum
1 tablespoon dry yeast


Preparation:

In a bowl whisk the eggs and the milk together. Pour into the bread maker.

Add in the lemon juice, salt, corn syrup and melted butter.

In a bowl combine and mix together the flours, bran and xanthun gum.

Pour into the bread maker. Sprinkle the yeast on top.

Set the bread maker to basic and 1 1/2 lb.

After cooking allow to cool in the bread maker for 10 minutes before removing.

Cool on a rack and serve.



White Bread


Ingredients

1 egg
1 1/3 cups water
1/4 cup melted butter
1 teaspoon lemon juice
1 tablespoon liquid honey
1 cup tapioca flour
2 cups rice flour
1/2 cup potato flour
1/2 corn flour
1 tablespoon xanthun gum
1 1/2 teaspoons powdered gelatin
1 1/2 teaspoons salt
1 tablespoon sugar
4 tablespoons powdered milk
1 tablespoon dried yeast

Preparation:

In a bowl whisk together the egg and the water together. Add to the bread maker.

Pour in the melted butter, lemon juice and the liquid honey.

In a bowl combine the flours, xanthun gum, powdered gelatin, salt, sugar and the powdered milk.

Add to the bread maker. Sprinkle the yeast on top. Set bread machine to basic and 2 lb .

After the bread is cooked allow to cool in the bread maker for 10 minutes before removing.

Cool on a wire rack and brush the top of the loaf with melted butter.



Potato Bread


Ingredients

1 large boiled potato
2 eggs
1 1/4 cups water
1/4 cup melted butter
1 teaspoon vinegar
2 tablespoons sugar
2 cups rice flour
1/2 cup tapioca flour
1 cup potato flour
1 1/2 teaspoons salt
2 teaspoons powdered gelatin
1 tablespoon xanthun gum
1 1/2 tablespoons active dry yeast


Preparation:

Boil a potato till cooked. Drain and cool in cold water.

Peel the potato and mash. You want to make sure there are no lumps in the potato.

Whisk together the eggs and the water together and add to the bread maker.

Add in the melted butter, vinegar, sugar and mashed potato.

In a bowl mix the flours, salt, gelatin and the xanthun gum together and stir.

Add the flour mixture to the bread maker. Sprinkle the yeast on top.

Set the bread maker to basic, 2 lb. After the bread is cooked allow to cool in the bread maker for 10 minutes before removing.

Cool on a rack and serve.



Non-Rye Bread


Ingredients

2 eggs
1 1/3 cups water
1 teaspoon cider vinegar
3 tablespoon oil
1 tablespoon liquid honey
1 tablespoon molasses
1 1/2 teaspoon salt
3/4 cup tapioca flour
1/2 cups soya flour
2 cups brown rice flour
1 tablespoon xanthun gum
1 tablespoon caraway seeds
1 tablespoon dry yeast

Preparation:

In a bowl whisk together the eggs and water. Add to the bread maker.

Pour in the vinegar, oil, honey, molasses and salt.

In a bowl combine the flours and the xanthun gum and mix together.

Pour into the bread maker. Sprinkle the yeast and the caraway seeds on top.

Set the bread machine to basic and 1 1/2lb. After cooking allow to cool for 10 minutes before removing from the bread machine.

Cool on a wire rack.
